Greek Mythology

In Greek myth, the Hydra was a serpentine monster that lived in a swamp beyond the city of Lerna. It was then killed by Hercules as his second labor.In some stories hydra had five, seven, or one hundred heads due to in myth when one was cut off 2 more would grow from the stump.

In God of War

In God of War, The Hydra is a massive multi-headed sea serpent roughly the size of a small island. The Hydra King is the dominant, central Hydra head, and it controls the smaller serpents. The other heads the Hydra King controls are less powerful and much smaller. As the game's main narrative begins, Kratos has been assigned by Poseidon, god of the sea, to kill the beast, which has been challenging his sovereignty by destroying ships and killing sailors. It can be seen attacking Kratos' Fleet, in which Kratos is on. Kratos kills the beast by driving its head through a ship's mast after it eats the ships captain and takes the Key of the Captain, and then continues in his quest to Athens. The Hydra is the first boss in God of War and is very powerful. It is odd when you kill the Hydra king if you backtrack you can still see a small Hydra head attacking the crew in the ship in the background.

In God of War II

The Hydra does not make an actual appearance, but the unlockable Hydra Armor costume appears to have been made from the carcass of the one killed in the first game.

Trivia

In Greek Mythology, there was only one Hydra, which was found in the swamp of Lerna. In the God of War timeline however, Hercules never mentioned his slaying of the Hydra, only that of the Nemean Lion, which reflects on his Nemean Cestus. Whether Kratos killed the Hydra in his stead, which was thus found in the Aegean Sea instead of the swamp, or whether several Hydra exist in the God of War timeline, is never revealed. Because Hercules does refer to killing Kratos as his thirteenth unnofficial labour, it would appear that there are several Hydra, since otherwise Hercules would have never made that far.
Oddly, after defeating the Hydra, if you backtrack, you can still see a head attacking a a group of sailors in the background.
